How to Make Buffalo Chicken Wings in an Oven

Deep frying could be fun, but not on a day when there’s a major game on TV or your favorite show is on! The last thing you want to do when there’s so much fun and you know you could be part of is manning the deep fryer. Yup! But what’s a party without finger-licking Buffalo Chicken Wings right?

This buffalo chicken wing recipe with oven post will teach you how to make other side dishes and still be part of the fun!

Marinated and coated with a double dose of hot sauce, these wings would come out just as crispy, sticky, and irresistible as deep-fried wings.

Real buffalo chicken wings get deep fried with a coating of butter and hot sauce. The tenderness and crispiness plus hot sauce make it top on most menus.

Deep-frying chicken wings certainly results in the crispiest, most succulent coat, but arguably, there’s something even better about roasting them in the oven.

The hot sauce marinade melts right into the meat, infusing it completely, I like how the wings pick up some smoky charred bits here and there. Nice Eh!?

With the oven method, you can make a huge batch all at once without having to stand at attention or man the oven. And don’t worry about the looks, baked buffalo chicken wings still get tossed In sticky sauce so it looks the part! They are even healthy (or at least less unhealthy) so that’s a plus too!

Parts of the Chicken Wing

  • The Tip – This is the third joint or bony tip of the wing. It is also known as the flapper. This part is often discarded or used for stock. It’s not included in the American Buffalo chicken wings.

  • The Wingette – This is the middle part of the arm. Its also known as a flat. It's quite descriptive because this part is flat too.

  • The Drumette – This is the upper part of the arm and the thickest. Sit looks like a drumstick when separate.

Sometimes you could get your chicken wings whole and unseparated at the grocery store. This means that these three parts are still connected in one piece. And at other times the wings could be separated into wingettes and drummettes. if the chicken wings aren’t separated you can always ask the butcher to chop it up or you can do it yourself.

How to Separate Buffalo Chicken Wings

When you have your wing in one piece and you need to chop up whole wings into the smaller parts, here’s how you do it:

Start at the joints. The joint connecting the wingtip to the forearm (wingette) and another connecting the forearm to the upper arm (drummette). Get a feel of the joints by bending the wing parts back and forth to loosen up the connecting tissues and then pressed down with a knife at the joints. You can use both hands to apply more force. This allows you to make a clean cut through the cartilage to separate both parts.

However, if you hit the bone or get stuck repeat the process, but this time, adjust the knife a little further or backward as the case may be. It gets easier as you cut more pieces.

While making buffalo chicken wings, only the wingette and drummette is needed. You can store up the tips to use them to make stock or discard them.

Hot Sauce to Use

We have our preferences when it comes to hot sauces. The heat you would like in your meal and what kind of sauce is up to you.

How To Make Buffalo Chicken Wings in the Oven
This recipe serves 6 to 8 persons and it takes about 15 minutes to prepare your ingredients for the oven. The cooking time is about 25 to 30 minutes. That’s quite enough time to prepare a side dish while your wings are simmering in the oven.


Chicken wings - ( 3 pounds)

Unsalted butter – 6 tablespoons

Hot sauce – 1/2 cup

Kosher salt – 2 teaspoons

Creamy blue cheese dressing and celery sticks – for serving


Chef's knife or kitchen shears

Measuring cups and spoons

Mixing bowl

Rimmed baking sheet

Aluminum foil


  • Separate the chicken wings, if necessary. If the wingtip is still attached, use a chef knife or kitchen shares to separate them. The forearm and the upper arm can be left as one piece. But if you prefer smaller pieces, use the chef knife to cut them at the joint.

  • Allow the wings to warm up. If you refrigerated the wings before cooking allow the wings to warm up by leaving them on the counter for a while else the butter sauce may congeal when tossed. However, if this happens no harm done!

  • Prepare the sauce Use a small saucepan to Melt the butter on medium-low heat. Take the butter off heat stir in the hot sauce and salt

  • Coat the wings with buffalo sauce. Use ½ of the mixture in a bowl and toss the wings around to coat them properly.

  • Marinate the wings. Cover the mixture for about 20 to 30 minutes at room temperature. You can also marinate it in the refrigerator for 24hrs, in which case, the butter will congeal but no harm is done. (if you are marinating for 24hrs, also preserve the sauce in the refrigerator but make sure to leave it outside the refrigerator for a while before use)

  • Preheat the oven. When the wings are ready, place the oven rack in the oven so that it is 6-8 inches below the broiling element and turn on the oven. When this is done, cover the baking sheet with aluminum foil and set aside.

  • Remove excess marinade and place the wings on the baking sheet leaving some space between them.

  • Broil in the oven for 10 to 12 minutes till its brownish on the surface Then flip the wings and broil the flipside for another 10 to 12 minutes till it is evenly cooked. You would know this when the skin is brown and the meat is easily pulled from the bone.

  • Toss wings in reserved buffalo sauce for another coat

  • Serve buffalo chicken wings with the blue cheese dressing and celery sticks! it’s Better served while it’s hot!

Best of all, you can prepare chicken wings in different ways and it’ll come out just great! If you are looking for easy special grilled chicken wings recipes, then you're in the right place, try these out.

1. Maple and Spice Grilled Chicken Wings


  • Chicken wings ( no tips, sliced into two at the joint)-2 kilograms
  • Onions (chopped)-3 large
  • Garlic (minced)-2 cloves
  • Dark Maple syrup-1 cup
  • Brown sugar-½ cup
  • Teriyaki sauce-1/3 cup
  • Reduced-sodium soy sauce -1/3 cup
  • ground black pepper-1/4 teaspoon
  • Reduced sodium soy sauce-1/3 cup
  • Dash of cayenne pepper
  • Cilantro for garnishing




Mix: In a bowl, pour in your onions, garlic, soy sauce, ground black pepper, maple syrup, brown sugar, and cayenne pepper and mix.

Coat: In a large sealable bag, pour in your mixture and add chicken wings. Shake to evenly coat the chicken wings and set aside.

Marinate: Seal the plastic bag and leave for 30 minutes in the refrigerator. After 30 minutes take out the wings from the bag and discard excess marinade.

Preheat the grill then place chicken wings on a foiled coated tray and cook for about 6 minutes per side over medium heat

Allow cooking through till brown and meat easily separate from the bone.

Top with cilantro and serve.

2. Spicy Peanut Grilled Chicken Wings Recipe


  • Chicken wings ( tips discarded and sliced into two at the joint) - 1 ½ kilogram
  • Brown sugar-1/3 cup
  • Peanut butter-1/4 cup
  • Cider vinegar-3 tablespoons
  • Vegetable oil -3 tablespoons
  • Hot sauce-3 tablespoons
  • Water-1/4 cup
  • Soy sauce-2 tablespoons
  • Chili paste-2 teaspoons
  • Toasted sesame oil-1 teaspoon
  • Finely minced garlic-1/2 teaspoon
  • Chopped peanuts




Step 1: In a bowl, pour in brown sugar, peanut butter, chili paste, sesame oil, water, cider vinegar, soy sauce, and garlic. Mix together properly and set aside. Step 2: Douse wings with vegetable oil and hot sauce. Step 3: Preheat the grill and cook wings on medium heat until it is cooked through. Step 4: Allow grilled chicken wings to cool for a few minutes then pour half of the peanut sauce over the wings. Step 5: Toss chicken wings to coat evenly, then sprinkle with chopped peanut. Step 6: Serve with the remaining peanut sauce.



3. Grilled chicken with white BBQ sauce

This recipe takes about 30 minutes to prepare. It is so easy to prepare, but yet so tasty! The tangy mayo and cider vinegar BBQ sauce is some real flavor for the chicken wings.


  • 4 lb. assorted chicken parts (thighs, drumsticks, wings)
  • 1 recipe White BBQ Sauce
  • Parsely leaves for garnishing

White BBQ Sauce

  • Mayonnaise -1/2 c
  • Cider vinegar -1/4 c
  • Horseradish, drained- 2 tbsp
  • Lemon juice- 1 tbsp
  • Sugar - 3/4 tsp
  • Cayenne (ground red) pepper - 1/4 tsp.


Step 1: Heat grill on medium-low.

Step 2: Season chicken all over with 11/2 teaspoons salt and 1/2 teaspoon black pepper.

Step 3: Grill chicken, covered, 20 minutes, turning occasionally.

While chicken grills, make White BBQ Sauce.

Step 4: Whisk together all ingredients, along with 3⁄4 teaspoon salt and 1/2 teaspoon black pepper, until smooth. Makes about 1 3/4 cups.

Step 5: Place 3⁄4 cup White BBQ Sauce in a bowl. Uncover chicken; generously brush with sauce. Turn chicken pieces over. Cook, brushing and turning chicken 2 more times, 5 minutes or until chicken is cooked through (160°F).

Step 6: Garnish with parsley; serve with remaining sauce.

Whether used when cooking or right before you dig into your noodles, a good shake of hot sauce always brings the heat!

Like every other thing you eat, hot sauce does have an impact on your body's metabolism. Just immediately after you take a bite or sometime in the future, a whole lot can happen in your body.

Here are the sweet things and not so sweet things about taking hot sauce! If you are a lover of hot sauce, you might want to love it a little bit more. But if you are a newbie, take a seat as I introduce you to the wonders of hot sauce!

Your tongue might be on fire

Talk about sweet pain! Some persons just love the burn! But you do not always have to burn while taking hot sauce. If you’ve ever had a bite of raw chili pepper, then maybe you are already familiar with this pain. However, not all hot sauces are that hot! Some just give you the right amount of flavor and heat without burning your tongue.

But not to worry, hot sauces do not cause any damage to your tongue. Your tongue may burn for a few minutes but your tissues are well intact. However, if you like to have some heat but not for long, a sip of milk always cools the tongue.

That characteristic burning sensation comes from the spice inducing molecule found in chili peppers called capsaicin. When you take hot sauce this spice-inducing molecule binds to the pain and temperature receptors of your tongue, then you feel the heat! Even though you are just fine.

The initial sensation you feel in your chest may not likely be heartburn. It’s most likely the capsaicin binding to the receptors in your throat. However, it can also lead to heartburn when the capsaicin causes the muscular valve of your stomach to stay open for long.

This allows acid to move into the esophagus and the result is a HEARTBURN. So, you might also want to keep an antacid handy if you’re going to try a hotter than hot sauce!

A study has shown that the capsaicin in chili pepper and cayenne help clear up congestion. So, if you experience seasonal allergies, some hot chicken soup might help!

You will lose some weight.

Hot sauce slows down your food intake. So, you don’t get to eat so much! Asides that, the capsaicin increases your body metabolism which helps you burn more fat and makes your weight loss more successful. So, it adds that flavor and heat but no extra calories!

Hot sauces help maintain your blood pressure!

Ok, this doesn’t happen after one meal, certainly! But, a study has shown that eating hot meals over time affects your blood pressure. The capsaicin molecule helps your blood vessels relax, lowering your overall blood pressure.

It might seem weird since hot sauce sends you running all over the place. But the study has also shown that capsaicin present in chili peppers and cayenne promotes the release of nitric oxide in the blood. This helps lower your overall blood pressure.

It suppresses prostate cancer cells

Of course this doesn’t happen all at once, but over time you can see the effect. A study has shown that capsaicin helps inhibit the growth of cancerous cells in the prostate. Considering the projection that 14% of men in the US are likely to have prostate cancer in their lifetime, you might want to add hot meals to your food regime.
